   Mom's Potato Salad
  • 5 medium potatoes -cooked in their skins, then
    peeled and diced
  • 1 cup celery- chopped
  • 1 small onion- chopped
  • 3 hardboiled eggs-chopped
  • 2 eggs beaten
  • 1 tablespoon flour
  • 3/4 cup sugar
  • 1/2 teaspoon salt
  • 1/2 tablespoon dry mustard
  • 2 tablespoon vinegar
  • 1/2 cup milk
First, mix the first four ingredients together.

Second, bring dressing ingredients to a boil. Cool to lukewarm and add 1 cup mayonnaise.

Combine the first four ingredients with the dressing, mixing well. Then refrigerate.

Fresh chopped parsley may also be added.


Chicken Potato Delight
  • 1 can condensed cream of chicken soup
  • 3/4 cup sour cream
  • 1/4 cup milk
  • 1 cup cubed cooked chicken
  • 2 1/2 cups shredded cheddar cheese, divided
  • 2 1/2 cups potatoes, cooked, cooled and shredded
  • 1 can french-fried onions
In a bowl, combine soup, sour cream, milk, chicken, and 1 1/4 cup cheese. Spread 3/4 of the mixture in a greased 2 qt baking dish. Sprinkle shredded potatoes over the top and press down lightly. Spread with the remaining soup mixture.

Sprinkle with onions and remaining cheese. Bake uncovered at 350 degrees for 1 hour.

Serves: 6

Oven Fries
  • 4 Potatoes, washed and pierced with a fork

Microwave potatoes until soft, approx 8 minutes in 1100watt microwave. When soft, cut lengthwise to make wedges.

Toss with 1 1/2 tablespoons of olive oil, and sprinkle evenly with seasoned salt. Broil at 500 degrees approx 10 minutes or until lightly browned and crispy.

Serves: 4
