Mom's Potato Salad |

- 5 medium potatoes
-cooked in their skins, then
peeled and diced
- 1 cup celery- chopped
- 1 small onion-
chopped
- 3 hardboiled
eggs-chopped
|

Dressing:
|
| |
- 2 eggs beaten
- 1 tablespoon flour
- 3/4 cup sugar
- 1/2 teaspoon salt
- 1/2 tablespoon dry mustard
- 2 tablespoon vinegar
- 1/2 cup milk
|

First, mix the first four ingredients together.
Second, bring
dressing ingredients to a boil. Cool to lukewarm and add 1 cup mayonnaise.
Combine the first four ingredients with the dressing,
mixing well. Then refrigerate.
Fresh chopped parsley may also be added.

Chicken Potato

- 1 can condensed cream
of chicken soup
- 3/4 cup sour cream
- 1/4 cup milk
- 1 cup cubed cooked chicken
- 2 1/2 cups shredded cheddar cheese, divided
- 2 1/2 cups potatoes, cooked, cooled and shredded
- 1 can french-fried onions

In a bowl, combine
soup, sour cream, milk, chicken, and 1 1/4 cup cheese. Spread 3/4
of the mixture in a greased 2 qt baking dish. Sprinkle shredded
potatoes over the top and press down lightly. Spread with the
remaining soup mixture.
Sprinkle with onions and remaining cheese. Bake uncovered at 350
degrees for 1 hour.

Potatoes, washed and pierced with a fork

Microwave potatoes until soft, approx 8 minutes in 1100watt
microwave. When soft, cut lengthwise to make wedges.
Toss with 1 1/2 tablespoons of olive oil, and sprinkle evenly with
seasoned salt. Broil at 500 degrees approx 10 minutes or until
lightly browned and crispy.
